10 Recipes to Get You in the Mood for Spring

There's nothing that will get you in more of a spring mood than some good recipes. For me, that includes fresh fruit and vegetables, herbs, and citrus. So, to get you ready for spring, here are my favourite 10 spring recipes.

This list includes some baking, appetizers, main dishes that have a mixture of fresh and cooked ingredients, and maybe a few drinks to get you on the patio on the first day we have an above-zero-degrees day out here.

Raspberry Lemon Loaf

The only baking recipe in this list (somehow?!), this recipe is so easy and is great to have as a fun snack to grab when you're on the go. It has fresh berries, citrusy lemon, a fluffy batter, and a crispy sugar shell. It's one of my favourites!

Sun-Dried Tomato & Shrimp Salad

This salad is super easy and this can be prepared and enjoyed later. The salad itself has a garlicky, olive oil taste combined with Italian herbs and a homemade dressing made with the oil from the sun-dried tomatoes. Such a refreshing and delicious meal!

Bruschetta Camembert

This amazing appetizer has the classic ingredients of bruschetta but with more focus on the cheese. Nothing beats a buttery melted cheese with fresh tomatoes, onions, parsley, and a splash of olive oil and balsamic vinegar too. Yum!

Grilled Mediterranean Vegetables

This recipe includes some of my favourite vegetables tossed in oil, dried herbs, grilled on the barbecue and tossed in fresh herbs, parmesan, and a little bit of balsamic vinegar. Some of my favourite flavours all in one dish! This recipe can be used as a side dish or accompanied by garlic bread.

Barbecue Hawaiian Turkey Burgers

These turkey burgers are the perfect recipe to make when the first barbecue-worthy day comes along this spring. The toasted coconut, avocado, barbecue sauce and grilled pineapple all add the perfect tropical flavour combination.

Cajun Chicken Bowl with Special Sauce

One of my favourite types of dishes is a good bowl. You can include a mixture of both cooked ingredients, and fresh produce (especially in the spring). This bowl specifically has a few of my favourite things: seared cajun chicken thighs, baked sweet potato fries, fresh cucumbers, avocado, crunchy green onions, and my favourite - special sauce!

Slow-Cooker Chicken Enchiladas

Enchiladas are one of my favourite dishes when I'm ready to mix things up but have super easy prep. These are especially easy because you can chuck the chicken in the slow cooker ahead of time and all you need is 10 minutes to assemble and broil the enchiladas for dinner. Plus, the enchiladas are really just tasty and perfect for Cinco de Mayo in May.

Ahi Tuna & Mango Poke Bowl

One of my favourite bowls to make that has all kinds of fresh ingredients is a classic poke bowl. Raw Ahi tuna, rice, sweet fruit, crunchy vegetables, and spicy mayo. Where can you go wrong?! I would highly recommend! If you don't have access to Ahi tuna at your local grocery store or are not a fan of "raw fish", then don't worry, just add cooked salmon or tuna and it'll still be amazing!

Cinco de Mayo Trio

Along with the enchiladas, these puppies will be great for Cinco de Mayo! These are my versions of the classic lime margarita, a blueberry mojito, and a frozen blended mango coconut margarita. Let me tell you, these drinks are so good to have when the weather gets nice enough to enjoy a drink outside. These also can be made alcohol-free if you'd like.

Citrus Red Sangria

Sangria is one of my favourite summer drinks and if you're a cocktail or wine lover, I'd highly recommend! This sangria recipe has ingredients that are easy to get, has just the right amount of booze, and it's very refreshing with the citrus! Such a great spring and summer drink!
