Hi everyone! I'm sharing a lighter and fresh recipe today: Sun-Dried Tomato and Shrimp Salad. I always crave more fresh meals when the weather starts to warm up that are super easy. This recipe is perfect for a no-fuss lunch or supper when you're feeling something a bit lighter but still want all the flavour!
This salad is super easy and this can be prepared and enjoyed later, although it is usually better when the shrimp and peppers are freshly cooked. The salad itself has a garlicky, olive oil taste combined with Italian herbs and a homemade dressing made with the oil from the sun-dried tomatoes. Yum!
Serves: 2 (as a main)
Prep time: 10 min
Cook time: 10 min
Salad Ingredients:
250g of pre-cooked shrimp (about 25-30 medium shrimp)
1 tsp dried basil
1 tsp dried oregano
Salt and pepper, to taste
1/4 cup sun-dried tomatoes, with the oil drained
1 red bell pepper
2 cloves garlic
1 tbsp oil
4 handfuls of spring mix greens
1/2 avocado
Parmesan, for topping
1 piece bread
Dressing:
1/4 cup of sun dried tomato oil
1 tbsp of vinegar
Salt and pepper, to taste
1/2 tsp sugar
1 tsp mustard
Directions:
Preheat oven to 400 or a low broil. Bring a skillet to medium heat.
Slice the pepper into thin slices and crush the garlic. Then, add 1 tsp of the oil into the skillet and add the peppers, sun-dried tomatoes, and let cook for 5 minutes.
Meanwhile, coat the shrimp with 1 tsp of the oil, basil, oregano, and salt and pepper.
Make the croutons. Rip the piece of bread into small (about 1-cm square) pieces onto a pan, coat in 1 tsp of the oil, and place in the oven and let cook for about 5 minutes (keep an eye on them!).
Once the peppers and tomatoes have been cooking for 5 minutes, add the shrimp to the skillet and let cook for another 5 minutes. Remove from heat.
Make the dressing by combining all the ingredients. Then, slice the avocado.
Make the salad by putting the spring mix, the shrimp/pepper mixture, and topping it off with the avocado, parmesan, croutons, and dressing! Enjoy!
Notes:
Make sure that you buy the sun-dried tomatoes that are packaged in seasoned oil, it brings a great taste to the tomatoes and the dish!
If you want to make this more filling, feel free to add orzo or a French bread on the side. I'm sure the French bread would soak up the leftover dressing pretty well.
These picture are of one serving of the salad, not both so keep that in mind if you're going off the pictures. It's a big salad!
