Spicy Honey Thyme Carrots

It's been a very long time since I shared a side recipe - so here it is! This recipe is my Spicy Honey Thyme Carrots. A favourite to add to any protein/carb/vegetable meal!


These carrots - as mentioned in the title - are spicy, buttery, sweet, and a little herby. The perfect combination for a delicious side dish!

When you're already seasoning the other dishes in your meal, it seems like a lot of work to also put effort into your side dish. But trust me, it can make your whole meal so much better.


The good thing about this recipe is that you likely have all the ingredients already and carrots are one of the cheapest vegetables to buy here in Canada in the winter. They make for a perfect side recipe!

Spicy Honey Thyme Carrots


Ingredients

  • 4-5 cups sliced carrots

  • 1 ½ - 2 tbsp salted butter

  • 1 ½ tbsp honey

  • 2 tsp dried thyme, chopped

  • 1 tsp cayenne pepper

  • ¼ tsp black pepper

Directions

  1. Fill a large pot to about a third full. Bring to a boil on high heat.

  2. Add the sliced carrots to a steamer basket and place in the pot. Cover with the lid, bring to medium-high heat, and steam for 8-10 minutes - until the carrots a softened. (See notes if you don't have a steamer basket).

  3. Bring a large saucepan or skillet to medium-high heat. Add the butter and honey and melt. Then, add the carrots, thyme, cayenne, and black pepper. Toss to combine. Sear the carrots for about 4-5 minutes.

  4. Once seared, remove from heat and serve!

Notes

  • If you don't have a pot with a steamer basket, don't worry! Just skip that part and put the carrots directly in the saucepan with a ¼ cup of water. Cover and boil for 8-10 minutes, then uncover for the last 2 minutes. Add more water if you need, but you don't want any remaining when you add the remaining ingredients.
