Chopped Italian Chickpea Salad

This Chopped Italian Chickpea Salad is just the refreshed approach to winter salad you need on your menu.

This one is super easy to prepare, just chop up the ingredients roast the chickpeas if you have the time, toss in dressing and enjoy! Even better - you can meal prep this recipe and still enjoy days after you make it and it will still taste amazing!


With that, this is a great lunch to make ahead of time and enjoy at work. With filling and nutritious ingredients, this salad will ensure you stay satisfied through your day while enjoying a spicy, flavourful lunch!

Chopped Italian Chickpea Salad


Serves: 5-6 (as a main meal)

Prep time: 20 minutes

Cook time: 20 minutes (optional)


Ingredients

  • 1 (540mL) can of chickpeas, drained & rinsed

  • 1 tablespoon oil

  • 1 teaspoon paprika

  • 1 teaspoon garlic powder

  • 2 heads lettuce, shredded

  • 150g salami, sliced

  • 1 cucumber, diced

  • 1 red bell pepper, diced

  • 1 ½ cup diced spicy pickled bell peppers

  • ½ red onion, diced

  • ¼ cup chopped fresh parsley


Dressing
  • ½ cup vinegar from pickled peppers

  • ⅓ cup olive oil

  • 1 ½ teaspoons salt

  • ½ teaspoon black pepper

  • 1 tablespoon honey

  • 2 cloves garlic, grated

  • 2 teaspoons dried basil

  • 1 teaspoon dried oregano


Directions

  1. Preheat to 400°F and line a baking sheets with parchment paper. Toss the chickpeas with oil, paprika, and garlic powder. Place in the oven and bake for 20 minutes. This step is optional but it definitely adds some flavour to the salad. When done, add to the other salad ingredients

  2. Meanwhile, add the salami, cucumber, bell pepper, pickled peppers, red onion, and parsley in a large bowl.

  3. Mix the dressing in a jar. Drizzle over the salad and toss to coat all ingredients. To serve, scoop the salad mixture over the lettuce and enjoy!

Note: if you'll be enjoying the entire salad in one sitting, feel free to mix the lettuce in with the rest of the ingredients.
