Today, I have another breakfast recipe for you that is so dang easy, healthy, and delicious. Breakfast bowls are a great way to get a balanced breakfast while still having your favourite ingredients and feeling full after! Plus, bowls have so many choices of flavouring and ingredients, you can change it up every time!
This specific recipe is super simple and easy to go off of as a base recipe if you want to change it up. This has garlic and salty air-fried potatoes with spinach, cherry tomatoes, and mushrooms the are thrown into the frying pan with the eggs to minimise dishes. This can be cooked immediately before eating or prepared at the beginning of the week to make your mornings quicker.
Serves: 1
Prep time: 5 min
Cook time: 10 min (Air-fryer), 20 min (oven)
Ingredients:
3/4 cup chopped potatoes
1/4 tsp garlic powder
1/4 tsp seasoning salt
1 tbsp oil
4 cherry tomatoes, quartered
1/4 cup sliced mushrooms
1 handful baby spinach
2 large eggs
Salt & pepper, to taste
1 quarter of avocado, sliced
Hot sauce for topping (optional)
Directions:
If using air fryer, preheat to 400 for 3 minutes. Meanwhile, chop the potatoes and in a small bowl, toss with 1 tsp of the oil, garlic powder, and seasoning salt. Cook for 10 minutes at 400. If using oven, preheat oven to 425 and do the same prep for potatoes. Place the potatoes in the air fryer or oven. Make sure to toss around half way through cooking.
If using air fryer, immediately bring a large skillet to medium heat and add the remaining oil. Slice the mushrooms and tomatoes. Add the mushrooms to one part of the skillet, ensuring room for the eggs but that the mushrooms aren't overlapping. Then, add the eggs, the spinach by the mushrooms, and then the tomatoes. Season with salt and pepper.
Once the the eggs white have set, flip the mushrooms onto the other side, then cover with a lid and allow to cook until the whites over the yolks have also set (Or cook to your liking!). Remove from heat immediately.
If using the oven for the potatoes, do the previous steps when there are 10 minutes of remaining cook time.
Slice the avocado.
Add all the ingredients to a bowl and top with avocado and hot sauce (if using) and enjoy!
Notes:
You can make this ahead of time like the potatoes and even hard boil the eggs so you can enjoy this on the go and not waste time cooking!
You can add more protein to this if you'd like. I'd suggest ham, turkey, bacon, or even salmon.
If you want to still cook the potatoes in the morning but don't want to deal with the slicing and chopping, you can do that all on the day that you like to meal prep or the night before so you can just put it in the oven first thing!
