Pear Cinnamon Baked French Toast

Pear Cinnamon Baked French Toast


  • 1 loaf bread, brioche or a white bread, cut into 1-inch slices

  • 4 eggs

  • 1 cup milk

  • 3 tablespoons maple syrup

  • 2 teaspoons vanilla extract

  • 1 tablespoon brown sugar

  • 1 ½ teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ¼ teaspoon salt

  • 2 pears

  • 2 tablespoons butter


Crumble Topping

  • 3 tablespoons unsalted butter, melted

  • ¾  cup all-purpose flour

  • ¼ cup brown sugar

  • ¼ teaspoon salt


Directions

  1. In a large bowl or large casserole dish, add the eggs, milk, maple syrup, vanilla extract, brown sugar, cinnamon, nutmeg, and salt. Whisk together until combined. 

  2. Soak all the bread slices in the egg mixture for 5 minutes, flipping the slices halfway through. I find it’s easier to soak all the bread at once in a large casserole dish, but whatever you find is easiest!

  3. Meanwhile, thinly slice the pears vertically. 

  4. To assemble, add 2 tablespoons of melted butter in a bread loaf pan and layer the soaked bread and apple slices, alternating one piece of bread to 2 pear slices. Pour the remaining egg mixture over the loaf if there is any. Loosely cover with tin foil and refrigerate for 30 minutes. 

  5. While the loaf sits in the fridge, preheat your oven to 350°F.

  6. To make the crumble, combine the melted butter, flour, brown sugar, and salt. Let sit for 2 minutes before crumbling over the top of the loaf. Cover with the tin foil again and place in the oven to cook for 45-50 minutes, uncovering the last 10 to crisp up the crumble. 

  7. To serve, sprinkle with powdered sugar, maple syrup, or your other favourite toppings!
