Chocolate Peanut Butter Oatmeal Bar

Happy Monday everyone! Today, I'm sharing a snack or breakfast recipe that is easy, healthy, and tasty: Chocolate Peanut Butter Oatmeal Bar. This recipe is very flexible and you can add whatever ingredients suit your tastes: almond butter, cranberries, raisins, walnuts, or pecans. It's a cross between baked oatmeal and a granola bar so how can you not like it??


Yield: 9 pieces

Prep time: 20 min

Cook time: 25-30 min


Ingredients

1 1/2 cups quick oats

1/2 cup all-purpose flour

1/2 tsp baking powder

1 tsp cinnamon

1/2 tsp salt

2 tbsp shredded coconut

1/2 cup creamy peanut butter

1/3 cup oil

1/3 cup honey

1/3 cup brown sugar

1 tsp vanilla

2 large eggs

1/4 cup dark chocolate chips

1/4 cup peanuts


Directions

  1. Preheat oven to 325. Line an 9x9 baking dish with parchment paper.

  2. In a medium bowl, combine the oats, flour, baking powder, cinnamon, salt, coconut, and sugar.

  3. Bring a small saucepan to medium heat and add the peanut butter, honey, and oil. Stir often until it's melted together. Remove from heat and add to the oat mixture. Add the vanilla and eggs and beat in.

  4. Add the chocolate chips and peanuts to the batter. Place in the pan and flatten to the sides.

  5. Bake for 25-30 minutes until the edges are browning but the middle may look a little wet, but not jiggly - don't worry, it'll set as it cools! Remove from oven and allow to cool before cutting.


Recipes like this are perfect for making on Sunday to help prepare yourself for the week. It's a great snack to grab on the run or add yogurt and fruit to for breakfast. It includes a few of the ingredients that everyone loves like chocolate, peanut butter, and nuts but also some natural sweeteners and oatmeal to make you feel a bit better, bot physically and mentally, especially if you eat lots of it (no judgement here).
