Carrot Zucchini Muffins

Hello again! It's been a while and I apologise if you've been waiting for more recipes but things have been a little crazy and I needed a break! But, I'm back. And with some great recipes that will get you in the mood for summer!


Today, I'm sharing a new recipe of mine with you: Carrot Zucchini Muffins. I was meal prepping this weekend and realised that I really needed a healthy but filling snack to pack in my lunches. These are easy, tasty, and help you get those vegetables in without even noticing!


Yield: 12 muffins

Prep time: 15 minutes

Cook time: 22-25 min


Ingredients

2 1/4 cups flour

1/2 cup brown sugar

1/4 cup white sugar

1/2 tsp salt

2 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg (or pumpkin spice)

2 cups carrot, grated

1 cup zucchini, grated

3/4 cup butter, softened

3 eggs

1 tsp vanilla

2 tbsp water

1/2 cup pecans, roughly chopped


Directions

  1. Preheat oven to 350. Grease a 12-cup muffin tin.

  2. In a large bowl, combine the first six ingredients (flour, sugars, salt, baking powder, baking soda, cinnamon, nutmeg, pumpkin spice. Set aside

  3. Grate the carrot and zucchini or put them in a food processor to shred. Place in a medium bowl and combine with the butter, eggs, vanilla, and water. Pour into the bowl with the flour and combine until completely mixed. If using a mixer, put the dry ingredients directly into the mixer bowl and add the wet ingredients into that bowl to combine the batter.

  4. Add the pecans and roughly stir in. Don't over-mix the batter.

  5. Scoop the batter evenly into each muffin cup and place it in the oven. Bake for 22-25 minutes, once the muffins are slightly golden and a toothpick comes out clean.


If you are struggling to find time in the day to make a snack to keep you going throughout the day, muffins are the best snack to make at the beginning of the week. They keep you satisfied until your next meal but don't make you sluggish and aren't too sweet. Also, if you find that you can't get enough vegetables in your day or you have kids that just won't eat vegetables, try these out on your next meal-prep Sunday!
