30-Minute Chicken Fajitas

Hello! Today, I'm sharing a recipe that will hopefully make your meal-planning and suppers a bit easier this week. These 30-Minute Chicken Fajitas are the perfect family supper that are filled with nutrients, are super easy to make, and are sure to satisfy everyone's appetite.


Fajitas are one of my favourite easy suppers because you can make them with so many different ingredients, add tons of vegetables to make them healthier, and add all the different sauces you like. Plus, everyone can make their own to their liking at the dinner table. If you're either looking for an easy family meal or something to celebrate Cinco de Mayo with, these are for you!



Serves: 4

Prep time: 10 minutes

Cook time: 30 minutes


Ingredients:

2 large chicken breasts

3 bell peppers

1/4 yellow onion

1 tbsp oil

1 lime

1 1/2 tbsp cajun seasoning (see below)

8 medium-sized tortillas


Topping Ideas:

3/4 cup lime crema (see below)

Salsa of your choice

Sliced cabbage

Shredded cheese

Directions:

  1. Preheat oven to 375.

  2. Lay the chicken breasts on a sheet pan. Coat with a little oil and 1/2 tbsp of cajun seasoning. Rub it into the chicken and put in the oven and bake for 10 minutes.

  3. Meanwhile, slice the peppers and the onion. Toss in a medium bowl with remaining oil and 1 tbsp of the cajun seasoning. Once the chicken has been cooking for 10 minutes, take the pan out and add the peppers on the pan around the chicken. Cook for 20 minutes.

  4. Next, prepare the toppings you want like salsa, lime crema, cheese, or guacamole.

  5. Once the chicken and vegetables are done cooking, take out of the oven and, using two forks, shred the chicken on a cutting board.

  6. Serve immediately with your favourite toppings! Enjoy!



Cajun Seasoning:

2 tbsp garlic powder

2 tbsp paprika

1 tbsp cayenne pepper

1 tbsp dried thyme

1 tbsp dried oregano

1 tsp salt

1 tsp black pepper

2 tsp sugar


This makes a larger batch and you would only use a bit of this with this specific recipe but I like to have this seasoning in a jar ready to use. It's so good to have around!


Lime Crema:

For the lime crema, combine 3/4 cup of sour cream or plain greek yogurt, the zest of 1 lime, the juice of half a lime, and salt and pepper, to taste.


Like I said, these are pretty dang easy and you can make them however you want. I just wanted to provide a base recipe for you to go off of, especially if you haven't tried fajitas yet.
