Red Velvet Ice Cream Sandwiches

These super easy and super tasty Red Velvet Ice Cream Sandwiches are just the treat you need this summer. Make for a summer afternoon treat or evening dessert. Everyone will love them!

I love a classic ice cream sandwich from the grocery store in the summer after a long hot day. Just enough cookie, with melty, creamy ice cream coming out the of sides. *chef's kiss*


These are just the twist I needed on the classic. Chewy red velvet cookies, white chocolate chips, and cream vanilla ice cream - an amazing combination.

Red Velvet Ice Cream Sandwiches


Ingredients

  • 1 cup unsalted butter, room temperature

  • 1 cup granulated sugar

  • ½ cup brown sugar

  • 1 egg, room temperature

  • 2 teaspoons vanilla extract

  • 1 teaspoon red food colouring

  • 2 cups flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ cup cocoa powder

  • ½ teaspoon salt

  • 1 cup white chocolate chips (optional)

  • 2 cups vanilla ice cream


Directions

  1. Preheat to 375°F and line 2 large baking sheets with parchment paper.

  2. In a large bowl or a stand mixer bowl, cream the butter and sugars until creamy. Add the vanilla extract and egg and mix until light and fluffy. Then add your food colouring and stir until just combined.

  3. Add the dry ingredients (flour, baking powder, soda, salt, and cocoa). Mix until just combined. Then, add the white chocolate chips and stir until dispersed into the dough.

  4. Bake for 8-10 minutes, you'll want them to be a little doughy and undercooked if enjoying frozen ice cream sandwiches. Remove the cookies from the oven and set them in a baking rack for 10 minutes.

  5. Let the cookies cool for about an hour, then cool for 30 minutes in the freezer before assembling.

  6. For assembling the sandwiches and enjoying them right away, use an ice cream scoop or a large cookie scoop and place about 2 tablespoons of ice cream on the bottoms of half the cookies. Press another cookie on top gently. To make this a bit easier on yourself, take the ice cream out and let soften for 10 minutes before assembling so you don't break your cookies while assembling.

  7. Enjoy! You can store these in your freezer for a week or two before enjoying.

Notes:

To have perfectly blended and delicious cookies, ensure that all cookie ingredients are at room temperature before mixing. Just take the butter and eggs out 2-3 hours before and you should be good. This ensures that the flavours are incorporated correctly and you don't have any lumps in the cookies.
