Indoor S'mores

Whether the weather is nice enough to have a fire or not, you can make these Indoor S'mores anytime and they will most definitely be a hit!


These are my Mom's Indoor S'mores. We used to have these growing up and they were always a hit. Everyone who tries them loves them. Even so, my brother and his wife had these on their night lunch menu at their wedding and for good reason. They're crunchy (but still chewy), sweet, and have the same taste as s'mores but little less messy to eat and can be made without a campfire.

Indoor S'mores


Yield: 12 square pieces
Prep time: 5 min
Cook time: 10 min

Ingredients

8 cups Golden Grahams cereal (approx. 1-13oz box)

1 1/2 cups chocolate chips

6 cups mini marshmallows (1 bag)

5 tbsp butter

1 tsp vanilla

1/4 cup corn syrup


Directions

  1. Melt butter in a large saucepan on medium heat. Add 5 cups of the marshmallows, leaving 1 cup aside, and melt.

  2. Add chocolate chips, stirring to melt. Remove from heat, stirring in the vanilla and corn syrup

  3. Add golden grahams and remaining marshmallows and stir well. They don't have to be completely covered, just covered enough to stick together.

  4. Press into a well buttered or non-stick 9x13" pan. The back of the spoon, if buttered, works well to press.

  5. Cool until firm and then cut into squares.


If you don't get many chances to have a campfire and make real s'mores or want to enjoy them any time of year, these are just what you need. Kids and adults alike will all love them if they like chocolate, marshmallows, and graham crackers, and I mean...who doesn't?
