Date Night Skillet Peach Cobbler

Soft, syrupy peaches, crispy but soft cobbler topping, and creamy vanilla ice cream - how can this Date Night Skillet Peach Cobbler not be a summer favourite?

I love peaches so if there's ever a recipe that includes peaches I'm in! Even better when they're covered in warm syrup, crunchy nuts, and ice cream. This recipe has just that. If you're lucky enough to get your hands on some fresh peaches this summer, definitely use them for this recipe!


This recipe is called a Date Night Skillet Peach Cobbler because I used a small 6-inch cast iron skillet and it's PERFECT for 2 people to enjoy. Of course, this would be delicious as an at-home dessert option after a date with your favourite person or by yourself :) Either way, you have to try this one out!

Date Night Skillet Peach Cobbler


Ingredients

  • 3 tablespoons unsalted butter

  • 1½ ripe but firm peaches, thinly sliced

  • ¼ cup brown sugar

  • ½ teaspoon vanilla extract

  • ¼ cup all-purpose flour

  • ½ teaspoon baking powder

  • 1 teaspoon cinnamon

  • 2 tablespoons walnuts or pecans, finely chopped

  • 2 tablespoons milk or cream

  • 1 teaspoon granulated sugar


Directions

  1. Preheat oven to 400°F.

  2. Add 1 tablespoon of butter to a small 6-inch oven-safe skillet and place on your stove at medium heat. Allow the butter to brown, stirring often, until fragrant and is a dark golden colour.

  3. Remove from heat and add the peaches, 2 tablespoons brown sugar and vanilla. Lightly toss to combine. Transfer to the oven and bake for 10-12 minutes.

  4. While the peaches are baking, whisk together the flour, nuts, baking powder, half the cinnamon, and the remaining 2 tablespoons of brown sugar in a medium bowl. Add the remaining 2 tablespoons of butter.

  5. Remove the peaches from the oven and bring the temperature down to 375°F. Place the batter on top of the peaches, ensuring it is distributed somewhat equally. Combine the remaining half of the cinnamon and granulated sugar in a small bowl. Then, sprinkle it over the batter.

  6. Transfer to the oven and bake for 20-25 minutes, or until the batter is golden. Let cool for 5 minutes before enjoying. Top with vanilla ice cream and enjoy!
