Blueberry Cream Flan

This is one of my family's favourite summertime dessert recipes. Its fresh, creamy, and can be enjoyed warm or cold. Bonus: you can add whatever fruit is in season into this: peaches, blueberries, rhubarb, raspberries, or whatever you can think of. Even better, you can use up your frozen fruit once it's out of season.


I got this recipe from my mom which she says she got from the Western Producer. I don't know why it's not more popular because this is so easy to whip up and it has ingredients that almost everyone has in their fridge/pantry on a normal day. And no, this flan is not as bad as the show "Friends" makes it out to be. It dang tasty.



Yield: 12

Prep time: 10 minutes

Cook time: 40-45 min


Ingredients

1 1/2 cups flour

1/2 cup white sugar

1 1/2 tsp baking powder

1/3 cup butter, softened

1 tsp vanilla

3 cups frozen blueberries

2 tbsp flour

1 egg

1 tsp vanilla

2 cup plain yogurt

2/3 cup white sugar


Directions

  1. Preheat oven to 350.

  2. In a medium bowl, combine the flour, sugar, and baking powder. Then, add the butter and vanilla and mix into the flour, pressing down on the larger chunks with a fork if needed.

  3. Press into a 9x13 baking pan or a springform pan. Spread the blueberries on top of the crust

  4. In another medium bowl, combine the remaining five ingredients. Pour over blueberries and spread with a spatula to reach the edges.

  5. Bake for 35-40 minutes until beginning to turn golden and cooked in the middle. The time depends on your oven so adjust accordingly.

  6. Allow to cool for 30 minutes before serving. Feel free to top with whipped cream.



This is the recipe that I mention in my "About" section that I put 1 1/2 cups of baking powder into instead of 1 1/2 teaspoons. Although I definitely still misread recipes, I think I've come a long way since then! So, if you're not very confident in your cooking or baking, we all have our moments and can improve so don't worry! Just keep practicing. This recipe is a great one for building confidence - except for my 13-year old self - because it's so simple but so satisfying as an end product.
