Balsamic Apple Pork Meatballs with Sweet Potato Mash

Ingredients


Pork Meatballs

  • 1 pound ground pork

  • 1 egg

  • â…“ cup breadcrumbs

  • 1 teaspoon garlic powder

  • ¼ teaspoon cinnamon

  • salt and pepper, to taste

Sweet Potato Mash

  • 2-3 sweet potatoes (depending on size), cut into 1-inch cubes

  • 1 tablespoon butter

  • Salt and pepper, to taste

  • 2 tablespoons milk

Green Beans

  • 1 tablespoon oil

  • 3 handfuls green beans

  • Salt and pepper, to taste

  • ¼ cup water

Balsamic Apples

  • 1 tablespoon oil

  • 1 apple, sliced

  • ¼ red onion, sliced

  • 1 tablespoon butter

  • ½ teaspoon cinnamon

  • â…“ cup white balsamic vinegar (can be subbed with white wine)

  • 1 ½ tablespoons mustard

  • ½ cup water


Directions

  1. Preheat to 375°F and line a baking sheets with tin foil.

  2. Fill a large pot with water and bring to a boil. Add the diced sweet potatoes and boil until potatoes are cooked through and softened.

  3. Meanwhile, in a medium bowl, combine the ingredients for the meatballs. Mash together to combine. Oil your hands and roll the meat into balls. Place on the baking sheet with space between them. Bake in the oven for 15 minutes or until the inside of the meatballs are at 145°F. Keep warm.

  4. While the meatballs and sweet potatoes cook, bring a saucepan to medium heat with 1 tablespoon of oil in it. When hot, add the green beans, salt, pepper, and water. Cook until softened and slightly seared, about 6-8 minutes. Remove from pan and set aside. Cover to keep warm.

  5. Using the same pan as the beens, add the oil, apples, and onions and cook for until slightly softened, about 3-4 minutes. Add the butter and melt. Then, add coat the apples and onions in cinnamon.

  6. Deglaze the pan with balsamic vinegar, then add the mustard and water. Let apple and onions stew until onions are translucent. You may want to add more water, depending on how thick you'd like the sauce to be.

  7. To make the sweet potato mash, place the sweet potatoes, butter, milk, salt and pepper in a medium bowl and mash with a masher or hand mixer (makes it super easy!).

  8. To serve, spread the mash on a plate, add the meatballs, side with the green beans, and top with the apples and onions, drizzling with extra sauce.
