These barbacoa (shredded beef) burritos are an easy slow-cooker meal with minimal prep required with a delicious result.
I never had "small" tacos growing up, we just always called the classic ground beef burritos tacos. However, once I got cultured when I moved to Saskatoon (lol...), I worked at a Mexican restaurant that had the best food and finally tried true tacos and barbacoa (which really means shredded beef). Both of which were SO GOOD.
Sometime burritos can be a little less messy than tacos so whatever you prefer, this recipe can be made either in taco form (small tortilla) or burrito form (large tortillas). I love both!

The beef in this recipe requires a little preparation beforehand, but the majority of the work is just putting most of the ingredients in a slow cooker and letting it do it's thing for 8 hours. My favourite kind of recipe! The tender beef with a little spice, creamy sauce, and a bit of crunch from the greens will have you drooling.
Easy Barbacoa Burritos
Prep time: 10 minutes
Cook time: 8 hours
2-3 lb chuck roast
1 cup salsa verde
2 tablespoons chilli powder
2 cloves garlic, sliced
1 ½ cup teaspoons cumin
½ teaspoon salt
½ black pepper
1 lime, juiced
¼ cup mayonnaise or sour cream
12 small tortillas or 6 large flour tortillas
2 cups sliced cabbage or mixed greens
2 avocados, sliced
In a slow cooker, add the roast, salsa verde, chilli powder, garlic, cumin, salt and pepper.
Cover and cook on low for 8-10 hours
When done, shred the beef and stir into the sauce in the slow cooker. Combine the lime juice and mayonnaise/sour cream to make a sauce.
Assemble the tacos by adding the beef, coleslaw, and avocados to the tortillas and drizzling the lime mayo over top
