Chocolate Banana Coffee Cake Muffins

Today, I'm sharing with you one of my Mom's classic recipes that she's been making since I can remember. This is usually made as a cake but I wanted to try it out in muffin form. This recipe is a little sweeter than banana bread and a little fluffier than your regular muffins, hence, the name coffee cake muffins.


These are great to make for a morning snack with your coffee or to throw in the freezer for your future self. The banana, brown sugar, and little hints of cinnamon paired with chocolate chunks is pretty dang good!


Yield: 12 muffins

Prep time: 10 min

Cook time: 25-30 min


Ingredients:

1/2 cup butter, softened

1 cup white sugar

1 large egg

1 1/4 cup bananas mashed (about 2 1/2 bananas)

1 tsp vanilla

1/2 cup sour cream

1 1/2 cups flour

1 tsp baking soda

1 tsp baking powder

1/4 cup brown sugar

1/2 tsp cinnamon

3/4 cup chocolate chips or chocolate chunks, roughly chopped


Directions:

  1. Preheat oven to 350 and grease a 12 cup muffin tin.

  2. In a medium bowl, cream together butter and white sugar. Then add the eggs and blend well.

  3. Add the bananas, sour cream, and vanilla to the butter and sugar mixture and combine.

  4. Add remaining dry ingredients except brown sugar and cinnamon and combine. Then, add the chocolate chips/chunks.

  5. In a small bowl, combine the brown sugar and cinnamon.

  6. Begin scooping the batter into the muffin cups. Fill until about half way, then scoop about half the brown sugar/cinnamon mixture on top of the batter. Then, scoop the rest of the batter evenly into the muffin tins. Sprinkle the remaining brown sugar on top of the muffins and place in the oven.

  7. Bake for about 25-30 minutes, until a toothpick comes out clean. The tops will look quite dark once done, thats alright! The sugar creates a hardened top and like the cake, the top gets quite dark as well.

  8. Once the muffins are done, allow to cool for 5 minutes and then remove from the pan to a cooling rack to cool. Enjoy!


Notes:

  • You can add more chocolate chips to the tops of the muffins or some nuts to the batter.

  • If you want to turn these more into a dessert, you can drizzle with a caramel sauce and it would be so good!


Try these out next time you need a little sweet snack and have a few brown bananas laying around. These are pretty yummy and addictive.
